Onions

The sandy soil of the Fraser Valley produces a hard, clean, smooth onion that is noted for its good cooking qualities. The main varieties we grow are Hamlet, Copra and Eskimo. They are all yellow onions that can be round or oval in shape with a bright colour, firm texture and excellent storage capabilities. Size does not determine the quality of the onion, larger onions are easier for slicing. Onions are great braised, baked, scalloped, grilled, stuffed, sautéed, used in stir-fries or raw in salads. Yellow onions are favored for use in French Onion soup.

Onions are an excellent source of Vitamin C and Folacin
