In the Fraser Valley we grow a variety of Squash; Acorn, Banana, Buttercup, Butternut and Spaghetti. Look for firm, well-shaped, clean squash with good color. Squash are surprisingly versatile vegetables.
They are sensational in soups, casseroles, fritters and in baked goods
such as bread and muffins. They make a tasty and low calorie alternative to spaghetti pasta too.
BCfresh Squash are a good source of Vitamin A, C, potassium and manganese. They are also very low in Saturated Fat, Cholesterol and Sodium.
Availability
BCfresh Squash are available from July through December.
Care and storage
Store at 48˚ F / 10˚ C at 65 – 70% relative humidity.
